New England Clambake - A Treasure From The Sea

The New England clambake has been a tradition for literally thousands of years. Seafood lovers who enjoy the conventional ways of cooking lobster, mussels, crabs, and clams will greatly enjoy these foods when prepared the clambake on the beach way. This kind of cooking usually helps mark celebrations such New Year’s Eve on the New England coast. To begin a New England clambake, start by digging a pit in the sand on the beach and then lay smooth stones in the middle of the pit.
At the beach you will start by digging a ditch to the following dimensions: 2 feet wide, 4 feet long, and 1-1/2 feet deep. Then line the ditch with stones from the beach. Then get a fire going inside the pit, wrapping it around with more rocks. Let the stones heat up for about two or three hours, then remove coals and ashes from the ditch. Then line the bottom of the ditch with the heated stones, placing fresh, wet, seaweed over the top of them.
Rapidly, layer the food on top of the seaweed, the food should be bedded evenly on top of one another in the following order: clams, mussels, fish, sausage, hotdogs which are covered in cheesecloth, onions, potatoes white and sweet, corn, and lastly lobsters. Wrap up food with a clean, wet cloth. Place the left over seaweed on top of the canvas.
Cover the food entirely with a wet tarp, this will contain the steam that is created by the hot stones and the seaweed. Only allow a small amount of the steam to escape to alleviate pressure build up. Let it continue to bake for an hour or longer, or until the potatoes have become soft. Serve up the clambake with some lobster crackers, and melted butter.
